One of those best corned beef ever places is right in St. Louis. Carl’s deli on Clayton Rd. across from St. Mary’s Hospital. Fresh made still hot corned beef and pastrami. I get a heap on rye with swiss, red onion and brown mustard. It’s a life altering experience. It’s the one go to place whenever one of my brothers comes through town. The place has not changed a bit in decades.
Oh, and Pugs, your problem with making corned beef at home might be using city water. The chemicals can mess it up. Same for making pickles or sauerkraut. If you don’t have access to well water get a jug of spring water at the grocery.

Looks like sound advice….thanks Bling! A well prepared corned beef is the king of meats in my book. I just googled Carl’s Deli and they open at 9am. We have drivers who travel from Wisconsin to St. Louis every night. They drop off relatively close to the stadium at 7:30am and then drive right on back. If Carl’s isn’t too far from Busch, I’m thinking of having our driver wait until 9am and then pick up a big batch of corned beef before returning. Hopefully it would travel well.
What’s weird, is that on paper the Cards should have a better offense. What are the real issues? Why isn’t it clicking?
Pugs have the driver get some pastrami also. They have fresh made corned beef and pastrami every day.
bccran, I think its related to why our pitchers can’t pitch. Some bright idea the pasty faced wonks came up with. The optimized swing works great in the virtual reality lab. If only opposing pitchers would pitch like they are supposed to. Just last night how many times did our hitters look like clowns hacking away at off the plate sliders with a two strike count. It is obvious pitchers know our guy will have his hands out front getting the barrel into the contact zone quick going for a moon shot. How many times has O’Neill missed one of those two strike faders by 12 inches?
I did see Edman with a nice looking swing once last night. Kept his hands back and let it come in deep then stroked a liner the other way. Exit velocity would have sucked and just enough angle to get over the infield but he hit it solid so it carried. Outstanding, but I am sure the optimized swing algo flagged it as a fail.
Good points. I like what the Mizzou baseball coach does. He has a competitive game he plays with his hitters. He has videos of pitchers winding up and throwing. His hitters have to guess the type of pitch as it’s leaving the pitchers hand on freeze frame. It’s all about early pitch recognition. As he says – “if you recognize it as a slider and it’s coming in at the knees or lower, you lay off it. The earlier you recognize the type of pitch, the better your decisions are.”
At this point winning series may not be enough. The Cards probably need to rip off a 7-10 game winning streak AND then keep winning every series.
cranny, many years ago at a rookie level short season facility I often observed a batting exercise the young guys would do. The ball would be on a tee and it would be positioned well back so the ball could only be hit the other way. Batters had a devil of a time consistently getting the sweet spot on it, and it was sitting stationary on a tee.
Its way easier to square it up and put a hurt on it when you get it out front. The problem comes when the pitcher doesn’t cooperate.
I put 2 slabs of corned beef in the smoker for about 12 hrs at 240 degrees and they came out delicious. Sandwiches for 10 days and mixed it in with hash browns for breakfast. The wife has to limit carbs due to pregnancy diabetes and took many a midnight trip to the fridge for a slice in between cracker cut cheese.
We get the packaged Corn Beefs at the grocery store. Buy the Armour brand but they’re not cheap. The seasonings come with it. Put it in a cassarole dish with at least a 1/2″ deep water in the dish. Getting tough corn beef is letting it get too dry. You can then bake it in the oven slow of fast. I use 350. Make sure you keep some water in the dish all the way through. Having this means you now need cooked cabbage.We boil ours but the German lady next door used to bake it with a sugar glaze. We could let CIF figure this out. Her cabbage also had pepper corns in it. Delicious! They’ll do better today but I agree with Pugs. Theres no substitute for experience. Those other guys better pitch right dang it!
When I was in college, we were disciplined to hit the ball where it’s pitched. It’s really not that difficult of a concept.
I only had one season of small college ball and had a hard time with much better pitching than I had seen. So I know its not easy. I was taught bat control and hitting it where its pitched by a high school coach to started everyone out with a bat that had a second knob made of tape a few inches up. Once you could control that you could hold it down on the knob. Anybody took a home run cut with two strikes on them and us needing a ball put in play better connect or he’d be washing socks and jocks that week. O’Neill would of been the team’s wash lady all season.
