December 25, 2021 at 5:34 am #178454Merry Christmas to all at TCN. Wifey and I are alone here in the south of France this year as pesky covid makes holiday travel problematic.
We consoled ourselves, however, with a Christmas Eve dinner starting with “coquilles St. Jacque (scallops) on the shell, then “grenadin de veau Rossini,” that is two-inch thick slices of veal filet browned in butter then set on piece of toast and doused with Madeira sauce while cooking finishes, then splashed with a bit of Armagnac to make a lovely flambé, and topped with a thick slice of foie gras, Yum, and accompanied with small mountains of potatoes mashed with Comte cheese, chopped onions and browned in the oven and sprinkled with paprika – all washed down with a nice bottle Gigondas. We finished things off with a delicious chocolate cake from our local patissier and a couple glasses of champagne before staggering off to our easy chairs in a state of utter satisfaction.
Today, Christmas Day, we will simplify matters with a bit of foie gras (once again!), a roasted guinea hen accompanied by a gratin Dauphinois (French scalloped potatoes with garlic and fresh cream) and a bit of green salad, along with a bottle of Mouton Cadet, before finishing off the afore-mentioned chocolate cake and some more bubbly.
All of this will require a substantial nap before phone calls with children and grandchildren in the States.

din din sounds wonderful CIF. We are empty nesters also. Sadly, we are presently quarantining due to close exposure, so any holiday visiting is distanced.
I have given up foie gras for personal reasons, but I strain some of the fat from roasting the duck and add a tbsp per lean liver to achieve ‘faux foie gras’. Next best thing. I’ll be making it up this evening.

We had a nice dinner of smoked ham, homemade mashed potatoes and gravy, homemade sausage stuffing, french style green beans, crescent rolls, and apple pie with ice cream, along with my usual diet mountain dew.
I am ready for an afternoon walk.
